I've been using Dokuwiki for years. I like the simple install and that it doesn't require use of a database. I chose it because it is geared more towards documentation compared to a lot of other wiki systems. Dokuwiki pages can also be turned in to a OpenOffice/LibreOffice document. -- Cheers!
