You could use the sqlite. Running something like:
#!/bin/sh sqlite3 log.db 'INSERT INFO log (message) VALUES ($MESSAGE);'
in a table setup like this:
CREATE TABLE log ( id INTEGER PRIMARY KEY, timestamp DATETIME DEFAULT CURRENT_TIMESTAMP, message TEXT );
